Edomae-zushi is a local cuisine of Edo, centering on nigiri-zushi (hand-rolled sushi). It was also called “Edo Zushi” or “Tokyo Zushi” in the old days. It is sushi prepared by sushi chefs at sushi restaurants using abundant and fresh seafood caught in Edo as ingredients.
